In a video interview, Tod reflected on his initial motivations for starting the brewery, stating, “It literally never crossed my mind that we would win any medals…my hope was just to be able to make beer for the rest of my life.” Tod’s journey was rooted in a passion for crafting unique beers that encapsulate the essence of Belgian brewing traditions, particularly Witbier, which makes use of intriguing fruits, spices, and yeast.

By choosing Witbier as his first brew, Tod aimed to create a product that stood apart from existing offerings. However, early on, he struggled to find a market for his craft beer. “I couldn’t give it away,” he recalls of the initial period when his offerings were limited to draft contracts in Portland, Maine. In a bold move, the brewery declared its intent to significantly increase its use of Maine-grown grains, pledging to use one million pounds of local barley by 2021. However, Allagash exceeded expectations, using 1.7 million pounds by 2024, thus ensuring that every beer in its portfolio now incorporates Maine-grown ingredients. The original recipe has endured, even as the brewing techniques and equipment have evolved. “It tastes exactly the same today as when I was able to get it the way I wanted it in the early days,” he notes, acknowledging early inconsistencies when brews were produced on rudimentary equipment.
